Casa Barú is our way of putting Panama into a glass: the character of the land, the care of the people who grow our cane, and a spirit with a story worth lingering over.

Our process begins with what we choose to keep: a connection to our growers, the richness of fermentation, and the individuality of each cask.
01 / THE CANE
Our starting point is artisanal sugarcane honey, sourced directly from small independent growers in the highlands of Chiriquí. Cane grown in volcanic soils and nourished by mountain rains brings a fruity, distinctive character to the spirit.
02 / THE COPPER
We distil our rum twice in copper pot stills, preserving the richness and complexity developed during fermentation. The stills are at the heart of our craft: where the character of the cane finds its voice.
03 / THE CASK
Our aged rums begin in freshly emptied bourbon casks. A second maturation of at least a year in carefully selected casks—such as sherry, cognac or rye whiskey—adds another layer to their story. One origin, with many ways to express itself.
